It is a very special dish that is only made during the Day of the Dead, practically in every home in Yucatán. The traditional cooking method consists of making a hole in the ground in which stones and wood are placed at the bottom. These, when heated, cook the “pib” covered with oak leaves and earth. We let it cook for about 2 hours; we dig it out or take it out of the stone oven, depending on the occasion, to let it cool down and then enjoy a pib. While this happens we go to Doña Eli where we will prepare the dessert and we will be able to taste the typical endemic sweets of the region, which said to enjoy a day arrived of tradition and gastronomy of the region, characteristic of the festivities, to be able to continue towards our final destination.
