MASTER MEZCALERO TOUR
The palenques in Oaxaca stand out both for their artisanal processes and for the diversity of agaves they use, producing two main types: artisanal mezcal and ancestral mezcal. In Santa Catarina Minas, a community in the Valles Centrales belonging to the district of Ocotlán, the specialty is ancestral mezcal. The excursion starts at 9:00 a.m. from the city center, accompanied by a certified guide. We will head to Santa Catarina Minas, where we will visit a community store of ancestral mezcal producers. Afterwards, we will tour the town to visit palenques of prestigious brands, some of which distribute their mezcals in renowned restaurants and shops. Our visit continues at the palenque of ‘Lalo Cura,’ a renowned peasant mezcal master who works with more than 17 species of agave on his land. Here we will learn about the artisanal process of producing 100% organic and export-quality mezcal.
Lalo Cura personally oversees every stage, from selecting the wood for distillation to raising cattle to fertilize his fields, ensuring sustainable, high-quality production. The experience culminates with a tasting in his cozy rustic room, where we sample over 10 varieties of mezcal under the guidance of a local expert. The senses are awakened by the unique aromas and flavors of each agave. After the tour of the palenque, we will enjoy a typical meal in a restaurant in the Ocotlán Valley.
